Peak Summer Produce

One of my favorite things about this time of year is how good the produce is.

The zucchini is everywhere, peaches are at their peak, and simple ingredients don't need much to turn into a great meal. These are the recipes I find myself reaching for when I come home from the farmers market with a bag full of summer produce and no real plan.

Here are a few favorites to make before the season slips away.

Pappardelle with Shrimp and Zucchini

This pasta feels like summer in a bowl. Tender shrimp, fresh zucchini, and ribbons of pappardelle come together in a simple dish that feels elegant without requiring much effort.

Peach Caprese Salad

A seasonal twist on a classic. Sweet peaches paired with creamy mozzarella, fresh basil, and juicy tomatoes make this one of my favorite summer salads.

Crispy Chickpea Salad

Packed with texture, flavor, and plenty of fresh vegetables, this salad is satisfying enough for lunch or dinner. The crispy chickpeas are what make it special.

Curry Cauliflower Bowls

Flavorful roasted cauliflower, hearty grains, and fresh toppings come together in a bowl that's filling, colorful, and perfect for a weeknight dinner.

Cannellini Bean Salad with Cucumber, Feta, and Za'atar

Fresh, herby, and packed with flavor. The crisp cucumber and creamy feta make this the perfect side dish for summer dinners and weekend gatherings.

Summer produce doesn't need much. A few fresh ingredients, a simple recipe, and dinner is practically done.
