Budget Friendly Dinners

January is my favorite time to keep things simple and budget-friendly in the kitchen. After the holidays, I like recipes that use affordable ingredients, stretch well for leftovers, and still feel satisfying to cook and eat.

Oven-Baked Chicken Leg Quarters

Affordable, flavorful, and practically foolproof. This is one of my favorite ways to get a lot of mileage out of one protein.

Easy One Pan Taco Skillet

Fast, flexible, and perfect for using what you already have in the fridge. Great for leftovers too.

Panko Parmesan Baked Cod

An easy way to make fish feel approachable and weeknight-friendly without a lot of extras.

Tuscan Broccoli

Simple ingredients, big flavor. This side goes with just about anything. (And it's one of my toddler's favorites!)

A little sweet, a little spicy, and always a hit — even with veggie skeptics.
