Have Dinner Outside Tonight
There’s something about summer evenings that makes me want to slow everything down. Some of my favorite memories of my adult life are eating dinner on my parents patio, with good food and my family surrounding me. It's the kind of thing I want to replicate for my own family.
Dinner outside, a chilled glass of wine, something simple but really good on the table. Nothing complicated — just fresh ingredients and meals that feel easy but still special. Is there anything better?
If you’re looking for that kind of dinner, here’s what I’d make for a summer night on the patio:

Lemon Orzo Salad
Bright, fresh, and so versatile. It’s light but still satisfying, and it works just as well as a main as it does alongside grilled protein.

Grilled Salmon Salad with Lemon Vinaigrette
This is one of my favorite summer dinners — perfectly grilled salmon over crisp greens with a simple lemon vinaigrette. It feels healthy, but still elevated.

Cannellini Bean Salad
Refreshing, herby, and packed with flavor. This is the kind of dish you can make ahead and let sit while you enjoy the evening.

Pappardelle with Zucchini and Shrimp
Light, summery pasta with tender shrimp and fresh zucchini — it feels elegant but comes together easily.
Salmon Crispy Rice with Green Salsa
Crispy, fresh, and a little unexpected. The contrast of textures and bright salsa makes this one really fun to serve.

Summer dinners don’t have to be complicated to feel special. A few fresh ingredients, a simple menu, good people, and a table outside — that’s really all you need.
If you make one of these, I’d love to know which one you try.
Happy Cooking!
Christina 💛
