Five Spring Dinners I'm Making Right Now
The second the weather starts to warm up, I immediately want to cook something lighter — but still comforting.
Spring dinners mean bright flavors, fresh herbs, a little lemon, and meals that feel elegant without being heavy. Something you can make on a Tuesday… but that still feels special!
Here are a few of my favorite fresh spring dinners right now:

|
Lemon Ricotta Pasta
Creamy, bright, and perfectly balanced. The ricotta makes it feel luxurious, while the lemon keeps it light and fresh. This is such a beautiful weeknight dinner.

Shrimp Luciano
Garlicky shrimp in a light tomato sauce — it feels elevated but comes together quickly. Perfect with a glass of white wine and crusty bread.

Green Goddess Pasta
Loaded with fresh herbs and greens, this one just tastes like spring. It’s vibrant, fresh, and such a fun twist on classic pesto. I just made this for a baby shower over the weekend and it was the star of the meal!

Lemon Orzo Salad
Light, fresh, and perfect as a main or a side. I love making this for easy lunches or serving it alongside grilled chicken or salmon.

Easy Baked Salmon Steaks
Simple, flavorful, and ready in minutes. This is one of my favorite ways to keep dinner feeling fresh and protein-packed without a lot of effort.

Spring cooking doesn’t have to mean complicated — it just means fresh ingredients and simple flavors that shine.
If you make one of these, reply and tell me which one you’re trying. I always love hearing what’s happening in your kitchens.
Happy Cooking!
